“Berry” Yummy Summer Recipes
Oregon Strawberries are some of the best around. If you’ve been getting grocery store strawberries while you’re waiting for farm stand strawberry season, we get it. Now prepare to have your socks blown clean off. Once you take that first bite of a fresh summer strawberry grown on a local farm you will be happier.
Here are some recipes we found that will add joy to your life:
Watermelon Berry Salad — @crowded_kitchen
4 cups watermelon, cubed into 1 inch pieces
1 ½ cups strawberries, sliced into rounds
1 ½ cups raspberries
1 ½ cups cherries, pitted and halved
2 tbsp freshly squeezed lime juice
1 ½ tsp lime zest
2 tsp honey or agave
1 tbsp of fresh mint, finely chopped
Combine all ingredients in a bowl and enjoy!
Fresh Strawberry Basil Dessert — @natsnourishments
400 g cut strawberries
4 tbsp balsamic vinegar
2 tbsp powdered sugar
100 ml double cream
1 tsp powdered sugar
Fresh basil to garnish
Cut the strawberries and cover with powdered sugar and vinegar, mix well and leave to stand for 20 minutes to get juicy. Whip the cream with the sugar so that it only just leaves a trail. Spoon it onto a plate or in a bowl and top with the strawberries and their juices. Garnish with fresh mint or basil.
Strawberry Bark — @jshealth
7 oz strawberries, sliced
½ cup shredded coconut
5.3 oz dark chocolate, melted
1 tsp coconut oil
Sea salt
Spread the strawberries across a lined baking tray. Sprinkle the coconut over the top. Mix the coconut oil into the melted chocolate. Pour the chocolate over the top of the strawberries and spread evenly with a spoon. Top with a little sprinkle of sea salt.
Place in the freezer for 30 minutes or until set.
